Does anyone know, if my wife was to do all the required stuff (anybody know what is required?) to become a Notary...Would it be a conflict of interest for her to sign off on all the contracts where we need a Notary signature? I keep thinking how convenient it would be to have her be a notary and be with me when I go to sign contracts on homes.

Can I notarize a document for a family member?

Although it's not prohibited by law, we strongly recommend against notarizing for family members. It may be determined that you're not acting as an impartial and unbiased witness.
